Event Spotlight: UT Law Graduation

Mission: Catering for 1,500 people.

Congratulations Class of 2015!

This past Saturday, we catered the University of Texas Law School graduation reception for the sixth consecutive year. The estimated guest count was for 1,500 people and we prepared enough food for everyone. There was a lot of preparation, planning, and even a moving truck to make it happen. At the end of it, we where really proud of the result.

We had three drink stations with water and iced tea, a big dessert station, a sandwich station and an appetizer station. This year champagne service was added to the event and it was a big hit.

The appetizer platters we offered where Seasonal Fruit and Vegetable Platters with Hummus and Jalape├▒o Ranch.

The Hors D'oeuvres that we served were Roasted Tomato Bruschetta, Caprese Tortellini Skewers and Avocado Mousse Shooters with Black Bean Pico and a Tortilla Chip.

The sandwich selections included Angus Roast Beef with Gruyere and Italian Peppers, The Vanilla Orchid Signature Veggie and Roasted Turkey, Brie & Fig Sandwich.

Our pastry team made a variety of Cake Balls, Mini Cupcakes and Cookies for the dessert station. The cake balls flavors were Double Chocolate, Lemon Passion Fruit and Carrot Cake. For cupcakes, we had Mexican Vanilla, Chocolate and Red Velvet. The cookie selection included Snickerdoodle and Chocolate Chip.

The event was a success and a huge factor of that is the hard work of our team.
